When tomatoes are at their best, these make an ideal accompaniment to lamb, beef or chicken dishes.
salt and freshly ground black pepper
2 tablespoons chopped parsley
3 tablespoons fresh breadcrumbs
2 cloves garlic, crushed
4 tablespoons olive or vegetable oil
1. Cut the tomatoes in half, discarding the cores. Sprinkle them with salt and pepper. Chop together the garlic and the parsley, then mix with the breadcrumbs.
2. About 20-30 minutes before serving, heat the oven to hot, 200ºC (40OºF) gas 6. Heat 2 tablespoons of the oil in a roasting tin or baking dish. Put in the tomatoes, skin side down. Sprinkle them with 1 tablespoon of oil. Place in the hot oven and bake for 10 minutes. Sprinkle with the garlic mixture, then with another tablespoon of oil and bake for another 2-3 minutes. If you like, brown the tomatoes under the grill just before serving.
